Candied Yams




2 lbs yams (see note)
3 C tiny marshmallows
½ stick butter
¼ C maple or waffle syrup
1 fresh orange

Cook the yams in the microwave until nearly done, but not squishy. Slice into rounds. Layer the ingredients in a baking pan in the following order: half the yams, half the marshmallows, dot with butter, half the syrup. Repeat, then squeeze the orange over everything. Bake at 350 for 45 minutes or until the marshmallows are lightly browned.

Note about yams: Try to find the long skinny ones instead of the short fat ones with tapered ends. The yellow ones are definitely sweet potatoes.
