Turkey Barley Soup
Ingredients:
1 pound lean ground turkey
1/3 cup red wine
1 six-ounce can tomato paste
9 cups beef stock -or-
9 cups water and two beef bouillon cubes
1 teaspoon Worcestershire sauce
1/2 teaspoon curry powder
1 medium onion, chopped
1 cup fresh or frozen broccoli
4 large carrots, chopped
4 stalks celery, chopped
1/2 cup dried barley
In a large pot, sauté turkey in red wine until brown, approximately ten minutes.
Add tomato paste and stir until blended.
Add remaining ingredients.
Bring to a boil.
Simmer for two hours.
Makes 12 cups.
