Southern Pecan Pie




1 9" deep dish pie shell, unbaked
3 eggs, beaten
1/2 C sugar
1/2 C dark corn syrup
1/2 C light corn syrup
1/2 tsp vanilla
1/3 C (2/3 stick) butter, melted
1/2 C pecans, halved
1/2 C pecans, broken


With a mixer, beat eggs, sugar, syrup, vanilla and butter together. Stir in 1/2 C broken pecan pieces. Pour into the pie shell. Arrange 1/2 C pecan halves on top of the mixture in an artful pattern. Bake at 350 for a little over an hour or until mixture is set and top is browned.

Fills one deep dish shell or two store-bought regular shells.

Notes:

This is the recipe I always use. It's from "Stir Ups", a cookbook from the Enid, OK, Junior League

If using two regular shells instead of the deep dish shell, reduce the baking time to less than 45 minutes.
