Forget about using a long, complicated recipe for mole sauce. Just buy a jar of commercial concentrate. It comes in a little glass jar about the size of a small glass of orange juice. All it takes is a teaspoon or two.
1 tsp commercial mole saucePut the concentrated mole sauce in a pan and add about 1/2 C water. Heat and stir out lumps. When it begins to get hot, add more water. Repeat: add water, stir in, heat until hot. You are done when the mole is hot and bubbly, and neither too thick nor too thin. Stir in the leftover turkey and warm until heated through. You might even simmer the turkey in the sauce for a while.
Serve on or beside white rice. A small green salad is nice, too.
