Roasted Almonds




1 lb shelled almonds or 3 lbs unshelled
2 qt boiling water
2 T butter
salt to taste

Shell the almonds if necessary. Heat the water to boiling. Add almonds and let soak for a few minutes. Spoon out a few at a time from the water and slide the skins off.

Thickly butter a glass baking dish. Put the almonds in, about 1 almond thick. Broil for about 10 minutes, stirring frequently until golden brown. Sprinkle with salt.

Instead of plain salt, consider using smoked or garlic salt or add chili or Cajun seasoning.
